Dinner: quickie chicken tortilla soup


I was so tired tonight, we just had Quickie Chickie tortilla soup. I am finally thankful for the time change.

2 containers chicken stock (8 cups)
3 cut up chicken breasts
Palmful of dried parsley
Palmful of dried cilantro
About a tablespoon ground cumin
1 can creamed corn
1 can rotel tomatoes
1 can crushed tomatoes
About 2 cups tortilla chips

Put everything but the tortilla chips in the pot and bring to a boil. Boil for about 20 min. Crumble the chips into the pot and simmer for about 10 min. Serve with sour cream dolloped on the top and more chips.

  2. That sounds really good and much easier than the southwest chicken soup I normally make. It's wonderful to see you getting back into the kitchen agan, friend.
