Going Greek on the Chicken

I have developed a new love for Greek food. Mostly because I love Feta Cheese...but a love none the less.

First, came the Spanakopita. I made that again this week. LOVE it, ate half of it by myself, and refuse to apologize for doing so!

Next, came Mediterranean Style Shrimp (see post below). YUM! Easy!

Then, since I made Spanakopita again a few nights ago, I had to figure something in the Greek food category to go with it.

Since I had a package of boneless skinless chicken breasts, I did a quick search on Greek style chicken, and combined a few ideas I found for a super duper quick chicken.

I tossed the following together in a gallon zip-style plastic bag:
1/2 cup olive oil
1 tsp dried oregano
pinch or so salt
pinch of red pepper flakes
the juice and zest of 1 lemon

Then, I cut 4 boneless skinless chicken breasts into super thin strips.

I tossed the chicken into the bag, and let it marinate while I threw together the other dishes.

Then, I grilled the strips on the indoor grill pan I have for the stove top (since grilling at -35 F is not gonna happen outside). It takes on a few minutes per side.

YUM! This took about 15 minutes total (including cook time) of my hands on time, and it marinated for about 30. Still 45 min for a main dish ain't bad at all!


Kelly...it has less than 5 ingredients if you don't count the salt and pepper!

  1. Yum, yum! I might need to try it. I have a grilling pan, but am not sure how to use it. Does this surprise you?
